I obviously thing the way which Doom rhymes is second to none. His lyrics are so wonderfully conceived and he has such interesting wordplay. I also think MC Paul Barman is a good lyricist. I was watching an interview with him yesterday where he is talking about how he would like to rhyme a 4-sylable word with 4 one-sylable words. His technique is just great. I think as far as the content of the lyrics then Kweli talks about genuinly important things and does so in an intriguing style.
