Select the text logo which is a 'T', located around the middle of your toolbar, click where you want the text to begin, and type.
The options are along the top, same as brushes.

Get ideas that you like, admire them and what you like about them, and then Google for tutorials, then practice until you can get something you like. I can't help you be creative.

lol, that's a broad ass question that has an entire branch of study dedicated to it.
I did a quick search on google and found a link that might help you get started with the basics.

If you scan them at a high resolution then you'll get big enough images to draw over them (using the pen tool in photoshop) and you won't really lose quality unless it's professional or for print.I want to scan my drawings and draw over them with the pen tool, except i want to use Illustrator because Photoshop uses pixel based graphics, can you give me any advice?
If your image is absolutely massive which it will be if you scan at high res, then simply draw over the original image with the pen tool at 100% zoom and it'll only distort into pixels if you try to make the image bigger, but i'm doubting you'll need to go bigger unless you're printing or want them to be stupidly non-postably massive, i mean bigger than a desktop background massive.
For any non professional, JPEG or compressed image smaller than 800px wide (just an average that i'm throwing out there, let's say it's slightly smaller than the height of your monitor), there's really no need for the hassle of learning vector in my opinion unless you want to go the extra mile anyway which I encourage..

It goes into nice detail about how it all works, it's worth a read as you'll learn a lot, and knowing the components you'll see in vector paths will help you follow future tutorials much easier.

It helps to try the excercises because you'll understand the pen tool more, and be able to use it much more effectively. Illustrator is different to the Photoshop pen tool, different shortcuts and what not, so if you're at home and comfortable with PS's pen tool then expect a hard time getting used to it haha, take it from me.
